  • True Grits | The NOLS Cooking Show
This recipe is to be prepared at home, as it makes a large batch. The dry mixture can then be divided into individual meals (typically about four ounces per person per meal) for consumption in the field. Depending on the system you're using, this will generate about four meals for your enjoyment after a long day of walking.   Ingredients 1 cup instant grits ½ cup nut mix ½ cup crushed Fritos ½ cup grated Parmesan cheese ¼ cup dried jalapeños ¼ cup bacon bits or imitation bacon bits ½ teaspoon onion powder ½ teaspoon garlic powder Pinch of salt   At home: 1)   Prepare the nut mix by combining equal parts almonds, cashews, and sunflower seeds in a food processor. Pulse until the mixture is granulated, but not powdered and set aside. 2)   Prepare the crushed Fritos in the same fashion and set aside. Both the nut mix and Fritos are a great way to add calories without adding much weight. 3)   Combine instant grits, nut mix, crushed Fritos, Parmesan cheese, dried jalapeños, bacon bits, onion powder, garlic powder, and salt in a large container. 4)   Using a scale, measure the desired amount of grits mixture to take into the backcountry and place in a bag. A groundbreaking ceremony for the new Wyss Wilderness Medicine Campus took place on 7/26. The event hosted the former land owners, Dr. and Mrs. Charles McMahon, and WMI and NOLS administrators as well as project design team members, project management staff, and neighbors. Design for the campus has been ongoing since NOLS closed on the property at the end of last year. A collection of residential structures are proposed that will support a central educational facility complete with offices, commons, classrooms, and kitchen/dining facilities. The campus design includes a variety of sustainable systems and components to lessen the impact of developing a portion of this natural 242-acre property. • Backcountry Tortillas & Backcountry Burritos | The NOLS Cooking Show
Bread and bread-like items generally aren't available on extended wilderness adventures—bagels don't last, loaves gets smashed, and pitas and ready-made tortillas are bulky. But the standard NOLS ration bag has more than enough ingredients to make your own tortillas in the field. Tortillas provide variety for your palate and can be a jack-of-all-trades: layer on peanut butter, brown sugar, and sunflower seeds; slather with butter and a dose of garlic salt; or roll 'em up and make burritos with bulgur, cheese, or refried beans waiting inside. • NOLS Alaska Mountaineering
http://www.nols.edu/courses/locations/alaska/akmountaineering.shtml This course takes you to a place in Southcentral Alaska often referred to as "the mountain kingdom of North America," where a chain of rugged mountain ranges and spectacular glaciers converge to make a mountaineer's dreamscape. Within this region you'll explore the coastal Chugach Range, the interior Alaska Range, or the vast Wrangell-St. Elias Range. The specific route for each course is entirely season dependent, with expeditions in the early season climbing mostly above snow line to access terrain via huge snowfields, and courses operating in the later season completing technical ice routes on glacier. All routes on the course for students ages 17 and older are classically Alaskan with long approaches on large glaciers. The shorter course for students ages 23 and older flies directly onto a glacier to maximize time for technical skill development. Both courses provide an ideal training ground for learning to live and travel responsibly and efficiently in challenging mountain terrain. STEP's mission is to equip academically-promising, low-income, first-generation college-bound Arizona teens with the self-confidence, leadership skills, and internal tools to succeed in college. STEP's overall goal is to help break the chain of generational poverty in the families with which we work by preparing students for success in higher education. After creating STEP in 2002, STEP Founder Tracy Baynes partnered with NOLS Professional Training in early 2005 to serve their mission of providing life-skills and leadership training to low-income, college-bound high-school students in order to better prepare them for the challenges ahead in college. STEP students go on a 3 week customized NOLS sea kayaking expedition in the pristine wilderness of Alaska's remote coastlines. For 23 days STEP participants paddle a sea kayak beneath towering glaciers and past wooded coves. Presented by Rick Rochelle, Ashley Wise, & Anna Haegel Have you ever heard that it is impossible to provide students with meaningful leadership opportunities on technical courses? The goal of this workshop is to dispel this myth by discussing specific concepts and tools for applying the NOLS leadership curriculum on technical courses, including ideas on how to create and define student leadership opportunities. We will provide models on how this can be done on spring winter sections, mountaineering courses, climbing camps, and whitewater and sea kayaking courses and discuss potential applications to other technical course types. There will be time for questions and brainstorming future innovations. -------------- About the NOLS Faculty Summit -------------- The NOLS Faculty Summit will inspire faculty to lead and teach excellent courses.
